Masala dosa – famous South Indian break fast, rice pancake made from rice batter and black lentils.
Ingredients for Masala dosa

rice 250 gms
urad dhal 100 gms
fenugreek 1/4 tsp
cooked rice 1 tbsp
water 100
salt to taste
melted butter 50 ml

Ingredients for filling Masala dosa

potato 250 gms
peas 100 gms
refined oil 15 ml
urad dhal 1/2 tsp
mustard seeds 1/2 tsp
chana dhal 1/2 tsp
onions (slit length wise) 2 No’s
ginger chopped 1/2 tsp
green chillies chopped 1/2 tbsp
coriander leaves chopped 1/2 tbsp
turmeric 1/8 tsp
salt to taste
lime juice 1/8 tsp
water as require
Ingredients for Red Chutney
around 6 clove garlic
2 red chillies
pinch of ginger
1/2 onion
2 tbsp channa dal (fried)
salt to taste

Preparation of Masala dosa

Firstly soak rice, urad dhal, Fenugreek for around 6 to 7 hours
Secondly wash and Drain water
Mix cooked rice, water, soaked rice, urad dhal and fenugreek and blend it with grinder.
And store the batter for complete whole night till the batter gets fermented.
And once the fermentation is taken place the batter quantity will increase.
Mix the batter with salt.
Once the batter is ready.
Do the preparation for filling.
Boil potatoes and peel the skin off and smash the potato using smasher.
Boil peas and keep aside.
Keep the frying pan on medium flame, add oil, mustard seeds, urad dhal, chana dhal, chilies and saute, when the dhals turns to golden brown add onion.
Once the onion turns its colour to golden brown add ginger, coriander leaves and turmeric, cook over slow flame.
Add cooked peas, smashed potato, lime juice, water and salt and cook in medium flame, till the water evaporated.
Remove from flame, know the filling is ready.
Prepare red chilli paste.
grind onion, garlic, ginger, fried channa dhal and salt to gather to prepare paste.
Heat the pan in a medium flame, pour prepared batter on to the pan and spread it in round flat shape, apply oil.
Apply red chilli paste on to the Masala dosa and cook till it gets golden brown colour.
Finally put ½ cup of prepared filling in between dosa and fold it in half circle shape and serve hot.
